Bacon and Potato Frittata


I like making frittata. Not only does it taste nice but it’s quick and easy to make. You can also adapt the recipe to whatever it is you fancy at the time (or whatever is in the fridge) and it makes a good lunch box filler for the children.


Ingredients:
1 x onion
1 x teaspoon garlic, chopped
1 x teaspoon mixed herbs, dried
2 x large potatoes, thinly sliced
4 x tablespoons oil
8 rashers of bacon, sliced
6 eggs, beaten
½ cup cheese


Method:
Peel the potatoes and slice them thinly.
Put them in a large pot of boiling water and allow to cook for 2 mins (ensure you don’t over cook or they will fall apart)
Drain the potatoes and set aside.
In a pan heat the oil and fry the onions until golden brown.
Add the garlic and mixed herbs.
Add the bacon and allow to cook for a further 2 mins.
Grease a baking dish (or use spray and cook)
Arrange a layer of the potato slices in the bottom of the baking dish.
Add a layer of the bacon and onion mixture on top of the potatoes.
Continue process until you run out of ingredients – or run out of backing dish!
Pour the beaten eggs onto the potatoes (ensure it goes all the way around).
Sprinkle the cheese on the top.
Bake in a pre heated oven for 25/30 mins.

Serve with a side salad and garlic bread.
