Normandy Pork



I thought that this recipe sounded nice so decided to give it a go.  I have never used apple in anything (other than a dessert) before so wasn’t too sure about it but it turned out really nice.  It also calls for beer which is an added bonus!

Ingredients:

2 x Tablespoons oil
1 x Red onion, diced
500g pork fillet, sliced
1 x Can Bachelors Condensed Cream of Mushroom Soup
150ml Beer
1 x apple, cored and sliced
2-3 Tablespoons sour cream
1 x Tablespoon chopped fresh parsley

Method:
Heat the oil in a pan and gently fry the onion until soft.
Add the pork and cook until brown.
Add the soup and Beer and gently simmer for about 20- 30 mins or until the pork is tender.
Add the apple 5 minutes before the end of the cooking time.
Just before serving, swirl in sour cream and chopped parsley.
Serve on a bed of rice with mixed veg.



Add crushed chilli's if you want to add an extra kick.

4 x 4 Bread



Only in South Africa would you find a recipe called 4 x 4 bread!  When I saw this recipe I knew I had to try it.  I love making bread and it incorporates beer – bonus!  The bread was slightly dense but was really easy to make and it tasted great.  I really look forward to making it for my friends when they next come for dinner.

Ingredients:
500g Flour
1 x Teaspoon Baking Powder
1 x Packet Royco Tomato Spice
1 x Can Beer (I used Fosters)
½ Onion, sliced
2 x Tablespoons Thyme
½ Cup cheese, grated

Method:

Stir together the flour, baking powder, spice mix and beer.
Pour into greased loaf tin.
Top with sliced onion, thyme and grated cheese.
Bake at 180 for 40 mins.

Beer Grilled Pork Chops


While beer makes a good base for most stewed meats, it makes pork taste divine. Succulent braised onions and pork chops become slightly sweet and ever-so-soft from a simple beer broth, making this dish one to remember.
Ingredients:

4 large pork chops
Salt and pepper, to taste
2 x Tablespoons Thyme
1 tablespoon vegetable oil
1 x can beer (I used Fosters)
½ cup sliced onions
1 x tablespoon butter
1 x tablespoon flour

Method:

Season both sides of the pork chops with thyme, salt & pepper.
Heat oil in a large pan over medium heat. Add chops and brown on both sides, 6 to 8 minutes.
Add beer and onions and reduce heat. Cover and cook until for about 10 mins.
Take the Pork Chops out of the pan and place in a baking dish.  Grill for about 20 mins on a medium heat.
Leave the remaining beer in the pan and allow to reduce.  Add the butter and flour to the beer and stir well.  Pour over pork chops when done.

I served the Pork Chops with boiled baby potatoes and steamed Kale.

Beer Can Chicken


This delicious chicken dish is also called "beer butt chicken." The method involves placing a (beer or soda) can of liquid up into the cavity of the chicken, then roasting. The liquid inside the can boils forcing flavour up and through the meat.

Ingredients:
1 x whole chicken, cleaned
1 x beer (of your choice)

Method:

Marinade the chicken (I used peri peri)
Open the beer and drink ¼ of it.
Open up the chicken and place the can of beer inside the cavity.
Cook in a pre-heated oven for 1.5 hours (depending on the size of the chicken)

Please note:

Be careful when removing the beer can from the chicken as it will be very hot.
I turned the chicken onto it’s side and pulled the can out.
Pour any remaining beer into the roasting dish and make a delicious gravy.
