Tuna & Chick Pea Salad



This recipe is extremely tasty and very healthy.  Add some salad dressing if you find it to dry.

Ingredients:

1 x Can Chick Peas, drained
1 x Can Tuna, drained
1 x Can Sweet Corn (Small), drained
1/2 x Onion, diced
1 x Teaspoon Garlic, diced
1 x Tablespoon Mixed Herbs, dried
1 x Teaspoon Crushed Chilli
1 x Tablespoon Grated Cheese
1 x Handful Mixed Lettuce Leaves
6 x Cherry tomatoes, sliced
Salt and pepper to taste

Method:

Place the lettuce leaves in a bowl.
Mix the onion, garlic, herbs, chilli, chick peas, sweet corn, tomatoes and tuna together.
Place on top of the lettuce and sprinkle with the cheese.
Serve.

Salad Dressing


I love salad but can’t eat it without salad dressing.  I have been experimenting for a number of years and have finally concocted a salad dressing that I think is really nice.  My friend, Kelly, also really likes it which is a bonus.  I don’t buy salad dressing anymore.  Instead I make up a batch and I keep it in the fridge.  I hope you will like it.

Ingredients:

100 ml Vegetable Oil (You can use Olive Oil if you want to)
50 ml White Wine Vinegar
1 x Teaspoon Sugar
1 x Teaspoon Salt
1 x Teaspoon Mixed Herbs, Dried
1 x Teaspoon Mustard

Method:

Mix all the ingredients together and you are done!

Chorizo and Chick Pea Salad


Wanting to eat more Beans & Pulses I created this recipe from the ingredients that I had in my pantry / fridge and I wasn’t disappointed with the end result.  Fairly easy to make and a combination of my favorite flavors made it an instant hit.  I hope you will enjoy it as much as I do.

Ingredients:

2 x Tablespoons oil
½ x Onion
2 x Teaspoons Garlic, crushed
2 x Teaspoons Thyme, dried
¼ Chorizo sausage, sliced
100ml Passata
1 x Teaspoon sugar
¼ Mozzarella Ball, chopped into chunks
4 x Cherry Tomatoes, Halved
1 x Can Chick Peas, drained and rinsed
1 x Chilli, diced (optional)
Handful of lettuce
Salt and pepper to taste

Method:

Heat the oil in a pan.
Add the onion, garlic and herbs and cook for 2 – 3 mins.
Add the Chorizo and cook for about another minute.
Add the Passata and bring to the boil. 
Reduce heat and add the teaspoon of sugar.
Add the can of chickpeas and allow to cook for about 5 mins on a gentle heat.
Add the mozzarella, tomatoes and chilli
Season to taste.
Serve warm (not hot) on a bed of lettuce.

Chakalaka Chicken Salad


This chicken salad is simple to make but is extremely tasty.  If you like Nando’s and are trying to lose weight then this is recipe is definitely worth a try.

Ingredients:

1 x Chicken Breast, cut into strips
¼ Cup Nando’s Chakalaka sauce
2 x Tablespoons oil
1 x Handful Lettuce
3 x baby beetroot, halved
3 x Pickled Onions, halved
3 x Cherry tomatoes
6 x Olives

Method:

Marinade the sliced chicken breast in the Chakalaka sauce for 10- 20 mins.
Heat the oil in a pan.
Add the chicken breast (including the sauce) and gently cook for about 6 mins.
Remove from heat
Put the lettuce on a plate and top with the cooked chicken
Assemble using the other ingredients.

Note:
Ensure the chicken isn’t too hot when you add it to the lettuce or it will wilt

Warm Mackerel and Cannellini Bean Salad




I decided to make something using only the ingredients that I had in my pantry / fridge (Ready Steady Cook Style) and this recipe is the result.  I was really pleased with how it turned out as it was extremely tasty.  I really enjoy eating beans and pulses and, because this recipe turned out so well, have decided to eat them more often so watch this space! 

Ingredients:

2 x Tablespoons oil
½ Onion, diced
1 x Teaspoon Garlic, diced
1 x Teaspoon Herbs, dried
2 x Red Birds Eye Chilli, diced
1 x Can Cannellini Beans, rinsed and drained
1 x Can Mackerel, drained
8 x Cherry tomatoes, sliced in half
6 x Baby Potatoes, pre boiled
½ Ball Mozzarella, diced
Baby leaf salad vegetables
Salt and pepper to taste

Method:

Heat the oil in a pot.
Add the onion, garlic, chilli and herbs and cook for 2 – 3 minutes.
Add the Cannellini Beans and cook for a further 2 minutes.
Flake the Mackerel and add it to the pot.
Add the pre cooked potatoes, tomatoes and Mozzarella.
Cook until the Mozzarella starts to soften and melt.
Season to taste.
Serve with some baby leaf salad vegetables.

Cous Cous with Mackerel, Mixed Beans and Chilli


I love Cous Cous and Mackerel and often make up a batch of this to take to work for my lunch.  It's quick and easy and it tastes really nice.

Ingredients:
1 x Packet Cous Cous, prepared according to instructions
1 x tin Mackerel, flaked
1 x tin mixed beans, drained
1 x Birdseye Chilli, chopped
1 x lemon Juice
2 x Tablespoons Olive Oil
Salt and pepper to taste

Method:
Add the mackerel and mixed beans to the prepared Cous Cous.
Add the chilli, lemon juice and olive oil.
Season to taste.

Avo, Tomato and Mozarella Salad



I found some ripe Avocado's when I did my weekly shop at this week - end and decided to make a Salad and Avo Salad.  I served this with Minty Lamb Ribs.

Ingredients:
1 x Handful Lettuce
1 x Tomato
1/2 x Avo
1 x slice Mozarella

Assemble


Caprese Salad



A caprese salad or a insalata caprese is a simple salad consisting of fresh tomatoes, mozzarella and basil. The caprese salad was really good! It was nice and fresh and tasted like summer.


Ingredients:1 fresh ripe tomato (sliced)
1 ball fresh mozzarella (sliced)
1 handful fresh basil leaves
