My very first authentic Paella Pan!


This isn’t a recipe but I thought that I’d share it with you anyway as I was – and still am – really excited about it.  Gareth bought me an authentic Paella pan when he went on holiday to Spain last year.  I have wanted one for as long as I can remember and can now cross it off my wish list.  The pan came with a bag of rice and a pouch of stock so I just needed to add my Chorizo, Prawns and Lemon.  It was divine.  Paella has to be my all time favorite dish.

Prawn, Chorizo and Thyme Spaghetti



This recipe is quick and easy to make and it incorporates some of my favourite ingredients - Prawns and Chorizo!

Ingredients:

½ onion, diced
3 x Tablespoons oil
1 x Tablespoon garlic, diced
1 x Tablespoon Thyme, dried
1 x box Passata
1 x Teaspoon sugar
1 x Packet Prawns
¼ Chorizo Sausage, skin removed and sliced
Spaghetti cooked according to packet instructions


Method:

In a pan, heat the oil.
Add the onion, garlic and Thyme and cook for about 5 mins on a medium heat.
Add the box of Passata and bring to the boil.
Reduce heat and allow to simmer.
Add the teaspoon of sugar and stir.
Add the prawns and Chorizo.
Garnish with fresh Thyme and Serve with spaghetti.

·         Passata is made from ripe tomatoes that have been puréed and sieved to remove the skin and seeds.  It is sold in boxes and can be purchased at any supermarket.

Dinner with Friends

My friends, Kelly and Darren, came for dinner recently.  I originally wanted to cook a South African themed menu but as I couldn't get all tbe ingredients I needed I had to change it.  The pictures aren't good.  I really need to invest in a proper camera.  Maybe FC will bring me one, I am sure that I have been a good girl this year.  lol.


I made:


Starter:

Prawns with chorizo, tomato and Mozzarella.  Served with Melba Toast.  

(I bought these miniture Gino D'Acampo casserole dishes from Morrissons for £1.50 each!  Bargain!)





Main Course:

Moroccan Lamb Casserole served with cous cous and roast veg.

(I have made this dish so many times and it has always been nice.  I was very dissapointed and quite embarressed to serve it to be honest)





Dessert:

Lemon Curd Pudding
Malva Pudding

(Served with icecream and a waffer twirl)





Bread:

I made some home made bread although I used a different recipe to what I originally use.

Surf and Turf


My local supermarket had Langoustine’s on special so I decided to get some.  They are sold in packs of 4 and, as they aren’t very big, I decided to make a Surf and Turf.  It was divine.

Ingredients:

Steak
4 x Langoustine’s
4 x Tablespoons Garlic Butter
Salt and pepper to taste

Method:

Prepare the Langoustine’s by butterfly cutting them.
In a pan, heat the butter - ensure that it isn’t too hot or you will burn it.
Add the Langoustines and cook for about 6 mins turning occasionally.
Remove from heat and add the steak.
Cook for 2 mins on one side.
Turn and cook for a further 2 mins.
Garnish with lemon and parsley

Spanish Seafood Rice


This recipe calls for lots of garlic, chilli and lemons. My daughter especially loves it and she calls it the ‘hot rice’


Ingredients:
1 x bag mixed seafood
4 x tablespoons oil
2 x teaspoons garlic, chopped
3 teaspoons chilli, chopped
½ cup lemon juice
1 x tablespoon lemon zest
2 x tablespoons parsley, chopped
300ml stock
Salt and pepper to taste


Method:
Fry the onion in the oil until tender.
Add the garlic, chilli and lemon zest and stir well.
Add the rice and stock and allow to cook for 10 mins or until the stock has evaporated.
Add the seafood and cook for about 8 mins.
Just before serving pour the fresh lemon juice over the rice and sprinkle the parsley on top
