I have loved herbs & spices for as long as I can remember. To me, walking into an authentic Indian spice shop is absolute heaven. I love all the different tastes, textures and smells and can spend hours just wondering around looking at everything.
When I did my Culinary Arts Diploma, our last and most important project had to be about something to do with food. I’d decided to do my project on Herbs & Spices right from the beginning. My Chef Mentor didn’t think it was a good idea as lots of people tend to do their projects on the same thing and he felt that it would just be the same old same old so I had to prove him wrong and boy did I!
I decided to create a Herb and Spice “bible” It was an A4 lever arch file covered in proper sack. I then cut out block letters saying “HERBS AND SPICES”, covered them in real herbs and spices (each letter was a different herb/spice) and then covered it in plastic. The content of my project covered everything – growing, keeping, drying, harvesting, medicinal uses, recipes, actual herb/spice samples etc.. It got me 98% and an A+ which I was really chuffed about!! :)
I don’t understand people that don’t use any herbs, spices or seasoning when cooking. Yes, I can and do appreciate the true flavour of food but to me they bring the food to life so my spice rack is always fully stocked and I also have my very own little herb garden.
