Hasselback Potatoes aka Hedgehogs


I've always wanted to try these potatoes so I decided to make them for dinner last night.  They are relatively easy to make and are extremely delicious!  Will definitely be making them again!!

Ingredients:

Olive oil
Sea salt and freshly cracked pepper, to taste
Garlic cloves, sliced into thin slivers

Method:

Preheat oven to 425 degrees.
Wash the potatoes and thinly slice them.  Be careful not to cut all the way through!
Season each potato with sea salt and pepper.
Place a thin slice of garlic between each layer.
Place the potatoes in a baking dish and drizzle with olive oil.
Bake for 30 – 45 mins or until done.
Serve as an accompaniment or as a quick snack.
