Lime Pie


I have often heard of Key Lime Pies and really wanted to make one only we don’t get Key Limes in the UK (they are different to the one’s you get in the supermarket) so I decided to make a Lime Pie Instead.  I didn’t make the pastry but the filling was really easy to make and it tasted really nice. 
 
Ingredients:

1 can sweetened condensed milk
4 egg yolks
1/2 cup lime juice
2 teaspoons lime zest
1 x Pastry Case

Method:

Whisk the sweetened condensed milk, egg yolks, lime juice and lime zest in a large bowl until smooth.
Pour the mixture into the pie crust.
Bake in a preheated 300F oven until set, about 20 minutes.
Let cool to room temperature and then refrigerate for at least 3 hours.
